Preheat the oven to 375 degrees F and grease a 9″ baking dish with cooking spray. Next, add the ground beef in a large mixing bowl along with 1/3 cup seasoned dry bread crumbs, chopped onions, 1/4 cup sweet honey barbecue sauce, one beaten egg, and 2 tsp chili powder. Mix well until just combined. Once done, transfer the ground beef mixture into the prepared baking dish. Spread it nicely and evenly, then put it in the preheated oven and bake until it’s done (about 20 to 25 minutes.)
In the meantime, microwave the potatoes according to package instructions in a microwave-safe bowl. Add in 1 tbsp of butter, 1 (5 oz) can evaporated milk, 1 tbsp chopped fresh parsley, and 1 tsp garlic powder. Mash the potatoes until good consistency, then gently stir in 1/2 cup of bacon bits and 1/4 cup French fried onions. Once done, layer it on top of the cooked ground beef, then finish it with 2/3 cup Mexican-style shredded cheese mix. Put it back in the oven at a broiler setting, and heat it until the cheese fully melts and is bubbly. After baking, let it cool for ten to fifteen minutes, then serve.
