This cowboy cookie recipe is a beefed-up version of the oatmeal chocolate chip cookies shared by Sugar Spun Run on YouTube. They are bursting with flavor and texture because of the combined coconut, pecans, oats, and chocolate chips. A unique take on hearty, chewy, and not too sweet cookies.

Ingredients:

  •  1 cup unsalted butter softened to room temperature (226g)
  •  1 cup dark brown sugar firmly packed (200g)
  •  ½ cup granulated sugar (100g
  •  2 large eggs
  •  2 teaspoons vanilla extract
  •  2 cups all-purpose flour (250g)
  •  1 teaspoon baking soda
  •  ¾ teaspoon table salt
  •  1 teaspoon ground cinnamon optional
  •  2 cups old-fashioned rolled oats (212g)
  •  1 ½ cups sweetened shredded coconut (123g)
  •  1 cup coarsely chopped pecans (115g)
  •  1 ½ cups semisweet or milk chocolate chips

Directions:

Preheat the oven to 350F.

In a large mixing bowl, add 1 cup of softened unsalted butter, 1 cup dark brown sugar, and ½ cup granulated sugar. Combine until it’s light and fluffy.  Add in 2 large eggs and 2 tsp of vanilla extract. Stir until everything is well combined.Set aside.

In a separate bowl, whisk together 2 cups of all-purpose flour, 1 tsp baking soda, ¾ tsp salt, and 1 teaspoon ground cinnamon until all the ingredients are thoroughly combined. Add in the wet ingredients while gradually stirring until everything is nicely combined.

Then, add in 2 cups of old-fashioned rolled oats, 1 ½ cups of sweetened shredded coconut, 1 cup of coarsely chopped pecans, and 1 ½ cups of semisweet or milk chocolate chips.

Stir to combine until the added ingredients are evenly distributed and incorporated.

Line a baking sheet with parchment paper. Using an ice cream scooper, scoop in some dough and lightly round them. Place them on the lined baking sheet far apart.

Carefully place them in the oven and let them bake for 12–24 minutes at 350F until the edges of the cookies are light golden brown.

When done, while the cookies are still hot, place and gently nestle some of the extra chocolate chips on top of each cookie.
