One afternoon while sitting on my couch all cozy with my phone in hand and a hot coffee in the other, I happen to stumble upon this YouTuber Simply Mamá Cooks. I watched a video of her cooking various dishes and one particular recipe caught my interest, which is a cottage pie! Almost immediately, my stomach began to rumble and I just knew that I had to give this recipe a try. It took me a couple of minutes to prepare but it was so worth it. I am going to include this recipe in my meal plan for the next weeks to come.

Ingredients:

Beef Mixture

  • 1 lb. lean ground beef
  • ½ small onion
  • 2 cloves garlic
  • 1 ½ tsp Worcestershire sauce
  • ½ cup shredded carrot
  • 1 cup frozen peas
  • Fresh thyme (optional)
  • 1 tbsp tomato paste
  • 3 tbsp all-purpose flour
  • ¾ cup to 1 cup beef broth
  • Salt and pepper to taste

Mashed Potatoes

  • 1 1/3 lb. Russet potatoes
  • 1 clove Garlic
  • ½ cup Heavy cream
  • 3 tbsp Butter
  • 4 oz. White cheddar cheese
  • Salt and pepper to taste

Directions:

Step 1

Drizzle some oil in a preheated pan, then add the ground beef and sauté it before seasoning it with salt and pepper. Once the beef turned brown, add the shredded carrots, minced garlic, fresh thyme, Worcestershire sauce, and tomato paste. Mix it until well combined and cook for another 5 minutes or so. Add the all-purpose flour, beef broth, and peas, mix it well then turn off the heat.

Step 2

Peel the potatoes and cut them into large chunks, place them in a pot filled with water then add a clove of garlic. Bring it to a boil and cook until the potatoes become fork tender. Drain the potatoes then place them in a large bowl, add heavy cream, butter, salt, pepper, and white cheddar cheese. Mash and mix all the ingredients until fully combined.

Step 3

Prepare a greased baking dish, then transfer the ground beef mixture and spread them evenly. Top and spread it with the mashed potato mixture and sprinkle with white cheddar cheese. Bake it at 375°F for about 25 to 30 minutes uncovered, then let it sit for at least 15 minutes. Garnish it with chopped parsley and serve.
