Preheat the oven to 250F.
Add the corn pops to a large baking pan, then set it aside.
In a saucepan, add 1/2 cup of corn syrup, 1 cup of salted butter, and 2 cups of brown sugar. Place over medium-low heat. Give it a quick stir, then leave it alone. Let it come to a gentle boil without stirring. Once it comes to a boil, set a timer for 3 minutes and let it continue boiling without stirring, then turn off the heat.
Add 1 teaspoon of vanilla extract and 1/2 teaspoon of baking soda. Stir until the color changes. The color will turn lighter.
Carefully pour the mixture over the corn pops, then quickly mix to cover everything.
Place in the preheated oven and bake at 250F for an hour, stirring every 15 minutes with a wooden spoon to remove clumps. You don’t want to break the cereal but just loosen it.
Once done baking, let them cool before serving. Serve and enjoy!
