I love parmesan-crusted chicken and would always order it at Longhorn Steakhouse. However, with a lot of things going on currently, I had to stay at home most of the time, and although I’d love to go outside to eat, traveling all the way through seems like a not-so-good and time-consuming idea. So, I realized, I had to learn to make it on my own, at home. I was so happy when I found out that there are lots of tutorials and copycat recipes online, such as this one by Coop Can Cook on YouTube.

Ingredients:

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian dressing
  • 1 packet ranch seasoning
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp crushed black pepper

Cheese mixture

  • ½ cup provolone cheese, shredded or chopped
  • ¼ cup Parmesan cheese, shredded
  • 3 tbsp buttermilk ranch dressing

Breadcrumb mixture

  • 1 cup Panko breadcrumbs
  • 4 tbsp butter, melted

Directions:

Step 1

You can pound the chicken breasts with a meat tenderizer so that they are all the same thickness. In a small mixing bowl, add the Italian dressing, Worcestershire sauce, and a whole packet of ranch seasoning, then whisk them together until well combined. Season them with salt and crushed black pepper, then whisk them again until incorporated. Place the chicken breasts in a container or Ziploc bag, then pour the marinade over, and move the chicken around to coat them with the marinade evenly. Cover or seal the container, then put it in the fridge, and let it marinate for at least four hours or overnight. Place a skillet pan on a stove over medium-high heat, then heat up some vegetable oil, and add the marinated chicken.

Step 2

Sear or brown the chicken for about 3 to 4 minutes on both sides making sure not to move the chicken around too much until nice and brown. You can transfer the pan to 350 degrees preheated oven for about 8 to 10 minutes or you can continue to pan-fry the chicken on the stove until it was cooked thoroughly for about 5 to 6 minutes per side but will vary depending on the thickness of your chicken. In a small mixing bowl, combine the shredded or chopped provolone cheese, shredded parmesan cheese, and buttermilk ranch, then mix them together with a spoon. Scoop and put on top of each piece of chicken, and turn off the stove. In a separate bowl, combine melted butter and panko breadcrumbs, mix them together until uniform, then top the cheese with it. Place the pan in the oven, and broil it on a high setting for about 3 minutes.
