I absolutely love Olive Garden’s salad and dressing. We usually buy them from the grocery store, but I wanted to make it using fresh ingredients at home. Luckily, I found this copycat recipe by The Stay At Home Chef. I can say that this is definitely better than the store-bought ones! It has a smooth and zesty flavor that is just spotless. Ingredients:
For the dressing:
- 1/2 cup of mayonnaise
- 1/3 cup of red wine vinegar
- 1/3 cup of lemon juice
- 1 tablespoon of extra virgin olive oil
- 1 teaspoon of dried parsley
- 1 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of salt
- 2 tablespoons of grated parmesan cheese (optional)
For the salad:
- 4 to 6 cups of romaine lettuce
- half of a small red onion (sliced into rings or half slices)
- 1 large tomato (halved and sliced)
- 8 whole pepperoncini (drained)
- 1/3 cup of pitted kalamata olives
- 1/2 cup of croutons (optional)
- freshly grated parmesan cheese (optional)
- freshly cracked black pepper (optional)

Instructions:
Step 1:
In a mixing bowl, combine 1/3 cup of lemon juice, 1/3 cup of red wine vinegar, 1/2 cup of mayonnaise, 1 tablespoon of extra virgin olive oil, 1 teaspoon of dried parsley, 1 teaspoon of dried basil, 1/2 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt and 2 tablespoons of grated parmesan cheese. Whisk all ingredients together until well combined. Once smooth, carefully pour it into a salad dressing container.
Step 2:
In a large salad bowl, add 4 to 6 cups of chopped romaine lettuce. Add the sliced red onion, tomatoes, kalamata olives, pepperoncini, and croutons. Next, sprinkle grated parmesan cheese and freshly cracked black pepper.
Step 3:
Pour the dressing into the salad, give it a toss, and serve. Enjoy!
If you are not going to serve it immediately, you can pour the dressing later.
