People love In-N-Out burgers as they are cheap, delicious, and made of fresh ingredients. Whisk together lukewarm whole milk and instant yeast. Let it sit at room temperature for about 10 minutes.
Combine bread flour, fine sea salt, and granulated sugar in the bowl of a stand mixer.
To make the rue, combine bread flour and water over medium heat while continuously stirring until thick. Let it cool to room temperature.
Put your mixer on low and add the yeast or milk mixture. Next, add an egg, egg yolk, and the cooled rue. Mix for about 2 to 5 minutes. Combine the softened butter 1 tablespoon at a time to the mixture until thoroughly mixed for about 2 to 3 minutes.
Grease a bowl and place the dough ball. Cover it with lightly greased plastic wrap. Set aside and let it rise for about 1.5 to 2 hours. Punch the dough to remove gas, place it on a lightly floured surface, and divide it into 6 equal portions.
Fold the sides over and flip the seam side down and roll it into a ball. Place them on a baking sheet lined with parchment paper. Damp a towel and cover the bind. Let it proof for 45 minutes.
Brush the buns with egg wash and bake in the oven at 400F for about 15 to 17 minutes.
Place a small saucepan over medium heat and add unsalted butter. Once melted, add the diced onions, a pinch of sugar, and salt. Cook for about 30 minutes.
Whisk together mayonnaise, ketchup, finely chopped chives, Worcestershire sauce, and a pinch of salt in a medium bowl. Next, combine the finely diced dill pickles and caramelized onions.
Sear sliced onions over medium-high heat.
Place a cast iron skillet over medium-high heat and add in the burger ball. Press it down using a spatula, then season with salt. Sear it for about 2 to 3 minutes on both sides. You can base it with melted butter, garlic, and rosemary for additional flavor.
Melt one slice of cheddar cheese into one patty, then cheddar jack cheese into the other. Place the griddled onion on the bottom patty and place the other patty on top.
Slice the buns and toast on the skillet with melted butter.
Spread a generous amount of the sauce on both buns, then add sliced tomato and iceberg lettuce to the bottom bun. Add the burger patties and place the top bun.
