Properly rinse your carrots. Next, heat your medium-sized pan and add the 2 pounds of baby carrots. Then pour enough water to cover up the carrots. Set your heat to medium and cover the pan with a lid. Bring the carrots to a boil. Turn the heat to low and let it simmer for thirty (30) to forty-five (45) minutes or until the carrots are tender when pricked using a fork.
After 45 minutes or when the carrots are tender, remove half of the water from the pan. Then add one (1) tablespoon of brown sugar, two (2) tablespoons of margarine or butter, and one (1) teaspoon of salt to your carrots. Cover the pan with the lid and cook until completely tender but not mushy. You can add more salt for taste and a pinch of nutmeg for a nutty flavor.
After it is completely tender, turn off the heat then you are done! Serve on a plate and garnish with some green herbs. Enjoy!
