Rotel cheese dip has been a Texas party staple for many years. You will be hard-pressed to find anyone that doesn’t like delicious Rotel tomatoes, and they are so useful for many different recipes. I love canning my own pickles and vegetables, so when I found this awesome homemade canned Rotel video recipe tutorial by Noreen’s Kitchen, on YouTube, I knew I had to add this to my canning recipe repertoire.

Ingredients For Homemade Canned Rotel:

  • 10 1/2 pounds of  tomatoes (washed and diced)
  • 3 pounds of fresh green chilis (this recipe uses Hatch chilis, but jalapenos are the traditional chili that is used)
  • 1 1/2 pounds of onions (chopped)
  • Bottled lemon juice (not fresh)
  • 1 cup white vinegar
  • 1/2 cup cane sugar
  • 1/4 cup canning salt

You begin by washing, drying, and chopping your tomatoes, chilis, and onions. Then you add the chopped vegetables to a large pot and cook on low for 30 minutes.

Then, you will add the delicious cooked mixture to your sterilized mason jars and boil them in the canning bath for 20 minutes.
