Nothing is more comforting than a warm and flavorful beef stew! This dish by Brian Lagerstrom is a one-pot recipe that is fully loaded with mushrooms, carrots, onion, potatoes, peas, herbs, and meat. The beef and vegetables are perfectly cooked, and the sauce is fantastic. It’s the perfect meal for your whole family.

Start by removing fat in the center pieces of chuck, then cut the rest into cubes. You should be left with about 3.5 lbs of meat. Place the meat cubes into a bowl and drizzle with olive oil and 2 large pinches of salt. Toss the meat, then spread it onto a half-sheet tray. Place in the oven and sear for 20-25 minutes until well browned.
Place a large heavy-bottomed pot over medium heat. Once hot, pour a generous amount of olive oil, then add the mushrooms, carrots, onions, and a pinch of salt. Cook for 3 to 5 minutes until it begins to soften and caramelize. Transfer the vegetables to a bowl and set them aside.
Place the pan back on the stove over medium heat and add a stick of butter. Once melted, add the flour and stir. Cook for 60 to 90 seconds until smooth and a little bit brown.
Pour the beef stock and beer, and let it come to a simmer. Stir and scrape frequently. Once it’s simmering, add the beef. Add a splash of water to the beef tray, scrape up the fond, and add to the pot. Stir everything well. Place the pot uncovered into a 300F oven and cook for about 2 hours. Stir it halfway through.
Add the potatoes to the vegetables, followed by 3 tablespoons of flour. Toss to combine.
Add the veggies into the stew pot and gently stir. Next, add the bay leaves and thyme. Place back in the oven and cook for another hour.
The beef should be tender and the potatoes should be fork tender. Remove excess fat from the top of the stew. Add the peas and mix well. Taste and adjust seasonings if needed.
