The Christmas season is not only the time for family and friends to get together but also time for devouring sweet desserts! However, most of the sweet treats prepared are for kids, that’s why I wanted to make something the adults would enjoy instead. Lucky for me, it didn’t take long to find the best recipe out there. Quick Simple & Delicious is a channel on YouTube that features various dishes and desserts that are quick, easy, and most of the time cheap. I scrolled through the channel and found this coffee-flavored cake. I’m so excited to serve this on Christmas, I hope you are too!
Ingredients:
Sponge Cake
- 4 eggs
- 1/2 cup Sugar
- 1/2 cup All-purpose flour
Coffee Cream
- 3 egg yolks
- 1/3 cup of sugar
- 3 tbsp of All-purpose flour
- 1/3 cup of water
- 1/3 cup of milk
- 2 tsp of instant coffee
- 2/3 cup of unsalted butter
Chocolate Cream
- 1/3 cup of milk chocolate
- 1/4 cup of whipping cream
Garnish
- Cocoa powder
- Candied cherries
Directions:
Step 1
In a large mixing bowl, put 2 eggs then add 2 more yolks, pour the sugar and mix it until it becomes foamy. Sift all-purpose flour onto the cake mixture then whisk until well-combined. In a separate bowl, make a meringue by mixing 2 egg whites until they are foamy, gradually add sugar, then continue mixing until the meringue’s peaks are curling. Gradually add this onto the egg mixture then gently fold and mix well. Prepare a baking sheet lined with greased parchment paper. Pour the sponge cake batter onto the sheet and spread evenly. Bake it in a preheated 180°C (356°F) for about 10 minutes. Let it cool down and set aside. In a bowl, combine 3 yolks, add sugar then whisk before sifting all-purpose flour and continue mixing.

Step 2
In a large pot, combine the water, milk, coffee, and sugar, then whisk. Bring it to a boil and stir quickly while slowly pouring the egg mixture onto it. Filter the mixture then pour it back in the pot, cook it over low heat while stirring constantly until the mixture has become thick and shiny. Remove it from the heat but keep stirring for 1 more minute. Transfer it onto a bowl, cover with cling wrap then chill for about an hour.
Step 3
Transfer the chilled coffee cream onto a different bowl, add butter then mix until there are no more chunks left. Melt the hot chocolate on a pot, add the whipping cream, then melt and combine over low heat, let it cool until the mixture thickens. In a separate pot, start mixing the coffee syrup by simply boiling water, coffee, and sugar. Take the sponge cake and remove the parchment paper, brush the coffee syrup onto the top then spread the chocolate cream on it evenly. Layer with coffee cream then cut the cake into 4 pieces. Roll one strip, then continue where it ends with another cake strip until you’ve used up all four. Cover it with the remaining coffee cream, sift some cocoa powder onto it and garnish with some candied cherries.
