Preheat the oven to 300 degrees F. In a small bowl, melt 2 1/2 tsp of instant coffee powder with 2 tbsp hot water. Mix until fully melted. Set aside. Next, pour hot water into a pot, place a mixing bowl on top, then add two eggs, 5 tbsp white sugar, 5 tbsp brown sugar, and 2 pinches of salt. Whisk using a handheld mixer until combined. Once soft foams appear, increase the speed to medium and stir quickly until smooth and soft texture. Remove it from the pot, then sift 3/4 cup cake flour onto the mixture along with 1/2 tsp baking powder. Add the coffee and 1/3 cup melted unsalted butter. Gently fold them together until combined (carefully mix them to avoid foaming).
After mixing, transfer the mixture to a piping bag, then pipe the batter to an oiled coffee bean bread mold tray. Fill each mold only 50% with batter. Tap the tray twice to remove air bubbles, then place it in the preheated 300 degrees F oven. Bake the bread for 20 minutes.
