To start, combine 2 tbsp of cream and 1 egg yolk. Mix and set it aside. Next, to a large bowl, add 1 1/4 cups of all-purpose flour, 1/4 tsp of salt, and 1/4 cup of granulated sugar. Mix, then add small pieces of butter right into the flour mixture. Continue mixing to incorporate the butter into the mixture. After this, pour the egg yolk and cream mixture. Once the dough forms, wrap it with parchment paper and chill it for about an hour. Once done chilling, roll it out into the size of your tart tin. (Sprinkle flour as needed.) After this, gently transfer it to your tart tin, then press it against the fluted edge. Trim off the excess edges afterward, then poke some holes in the bottom using a fork. Place it in the freezer for about half an hour.

Next, bake the dough at 375 degrees F oven for 20 minutes. In the meantime, make the curd. Crack four eggs in a large bowl, then add an additional two yolks. Whisk it and set it aside. In a medium saucepan, add 1/2 cup of butter, 1 cup of sugar, zest of two lemons, and 1/2 cup of fresh lemon juice. Place the saucepan over medium heat and stir occasionally until the butter fully melts. Once the mixture starts to bubble, drizzle in slowly the beaten eggs while whisking. Whisk for a few more minutes to let it thicken, then strain it. Now, pour the curd into your baked tart shell, and pop it in the oven at 350 degrees F for eight minutes. After baking, let it cool down and chill in the fridge for at least two hours to overnight.
