Ingredients:

  • Zest of one lemon
  • ¾ cup granulated white sugar
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup fresh blueberries
  • ½ cup unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • ½ cup whole or reduced-fat milk, at room temperature

Lemon glaze

  • 2 tbsp granulated white sugar
  • 1 tbsp freshly squeezed lemon juice

Directions:

Step 1

In the bowl of your stand mixer, beat the butter for about 1 minute until softened, add in the sugar and continue to beat for 2 to 3 minutes until light and fluffy. Incorporate the eggs one at a time, then scrape down the sides and bottom of the bowl as needed, add in the vanilla extract, and beat. Stop beating the mixture, then prepare a separate mixing bowl, whisk the flour, baking powder, salt, and lemon zest together until well combined. Scoop out 1 tablespoon of the flour mixture and sprinkle it over a separate bowl filled with the blueberries. Toss it together until well coated. Go back to your stand mixer and set it on low speed, add in the flour mixture in 3 additions and the milk in 2 additions alternately. Mix them together until well combined then gently fold in the blueberries.

Step 2

Grease or spray the bottom and sides of your loaf pan, then line the bottom with parchment paper. Pour and spread the batter evenly into the loaf pan and bake it in a preheated oven at 350°F or 180°C for about 55 to 65 minutes or until the bread is golden brown. While the bread is baking, stir the sugar and lemon juice together in a small mixing bowl, then place it in the microwave for about 20 seconds or just until sugar has dissolved. Check the bread and insert a toothpick to test whether the bread is done cooking through, then remove it from the oven and place it on a wire cooling rack. Poke holes on the hot loaf, then brush the top with hot lemon glaze. Let it cool for about 30 minutes before removing it from the pan. Transfer to a wire cooling rack then let cool completely.
