Slice the bread into 3/4 inches thick. If you have time, place them on a wire rack and let them sit for 1 to 2 hours to dry the bread slightly. Preheat your oven to 275F.
Add the eggs, yolks, milk, salt, vanilla, cinnamon, and warm honey in a medium-sized bowl. Whisk until well combined and the honey has dissolved. Pour the mixture into a casserole dish that is large enough to fit 4 pieces of toast at a time.
Heat your skillet over medium-low heat and add 2 tablespoons of butter.
Dip 4 slices of bread into the egg mixture and let them soak for 30 to 40 seconds per side. Remove them and let the excess egg mixture drip back into the dish. Place the slices into the hot skillet and fry for 3 to 4 minutes per side until golden brown.
Transfer the fried bread slices to a baking sheet and place them in the preheated oven to keep them warm. Repeat step 4 with the remaining toast – add more butter if needed. Once all are fried, place them in the oven for another 10 to 15 minutes to let the center fully set.
Serve with your favorite toppings. Enjoy while it’s still warm!
