Ingredients:

  • 4 cups cooked chicken, shredded
  • 6 tbsp unsalted butter
  • 1 medium yellow onion (1 cup chopped)
  • 2 medium carrots (1 cup), thinly sliced
  • 8 oz white or brown mushrooms, sliced (stems discarded)
  • 3 garlic cloves, minced
  • 1/3 cup all-purpose flour
  • 2 1/2 cups chicken stock
  • 1/2 cup heavy cream
  • 2 tsp fine sea salt, or to taste
  • 1/4 tsp black pepper, plus more to garnish
  • 1 cup frozen peas (don’t thaw)
  • 1/4 cup parsley, finely chopped

Directions:

Step 1

Preheat your oven to 400 degrees F, and butter your casserole dish. Next, prepare and chop your veggies accordingly and set them aside. Now, heat a heavy pot over medium heat and melt 6 tbsp unsalted butter. Once melted, add the chopped onions and carrots and saute for eight minutes. After they’ve softened, add the chopped mushrooms and minced garlic and continue to saute for another five minutes. Next, add 1/3 cup all-purpose flour and stir constantly for two minutes. After this, add 2 1/2 cups chicken stock and 1/2 cup heavy cream. Bring everything to a simmer, stirring frequently. Season with 2 tsp fine sea salt and 1/4 tsp black pepper. Now, add the shredded chicken, 1 cup of frozen peas, and 1/4 cup of chopped parsley. Mix well, then turn off the heat. Cover it and set aside while you make the biscuits.

Step 2

In a large mixing bowl, combine flour, baking powder, and salt. Whisk together to combine. Next, add the cold butter cubes, then use a pastry blender to cut the butter into the flour until they’re combined. After this, add your half and half and mix that into the flour to make the dough. Once done, transfer the dough to a floured surface. Pat it into a rectangle, then fold it in half. Pat it into another rectangle and fold the dough in half again. Finally, pat the dough into a 5 x 10 rectangle and use a 2 1/2″ round biscuit cutter to cut out eight biscuits.

Step 3

Now, assemble the chicken pot pie. Transfer the filling to your prepared casserole dish. Spread it evenly, then place the biscuits on top. Place it in the preheated oven and bake for 25 to 28 minutes. Once done baking, brush the biscuits with some melted butter. Serve and enjoy!
