Ingredients:
- 6 chicken thighs (bone-in and skin-on)
- 3 tablespoons of olive oil (divided)
- 2 limes (zested and juiced)
- 3 cloves of garlic (minced)
- 1 tablespoon of honey
- 1 tablespoon of ground cumin
- 1/2 teaspoon of chili powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of cilantro leaves (chopped)

Instructions:
Step 1:
Add two tablespoons of olive oil, lime juice, and zest in a mixing bowl. Next, add cumin, chili powder, minced garlic, honey, salt, pepper, and chopped cilantro. Whisk everything until combined.
Step 2:
In a bowl or shallow dish, combine the marinade and chicken thighs. Let the chicken marinate for 30 minutes to 1 hour in the fridge.
Step 3:
Once done marinating, remove it from the fridge and let it sit for 10 to 15 minutes at room temperature.
Step 4:
Preheat your oven to 425F.
Step 5:
Put the remaining olive oil in a large ovenproof skillet over medium-high heat. Sear the chicken for about 5 to 6 minutes with skin side down, until they are golden brown. Flip, then cook the other side for 2 to 3 minutes.
Step 6:
Transfer the skillet to the oven and bake the chicken thighs for 15 to 20 minutes. The internal temperature should be 160F.
Step 7:
Remove the chicken from the oven, set it aside, and let it rest for 5 minutes. Garnish with lime slices and cilantro leaves before serving. Enjoy!
