I enjoyed making my version, yep you read that right, I already tried making this ahead of Christmas, I can’t help it as it’s hard to resist. I don’t regret it though because this must be one of the best gingerbread cakes I’ve ever tasted. Step 1
Crack the eggs in a large mixing bowl, then add regular white sugar, and brown sugar. Beat the mixture for about 5 to 7 minutes or until the color turned light yellow and foamy. Add vanilla extract, orange juice, orange zest, and molasses, then mix to combine. Then, sift flour, baking powder, and baking soda on the mixture, add salt, ground cinnamon ground ginger, ground nutmeg, and ground cloves, then gently fold them in.

Step 2
In a baking sheet greased and lined with parchment paper, pour the mixture and spread evenly, then bake it in 350°F (180°C) for 13 to 15 minutes. Let it cool for about 10 minutes then sift and dust with powdered sugar. Cover it with a kitchen towel and place another baking tray, then flip. Remove the parchment paper and dust with powdered sugar, roll the cake while it is still warm then let it cool completely.
Step 3
Prepare the filling by combining the mascarpone cheese, powdered sugar, and orange zest. Whip the mixture until well-combined. Beat the whipping cream until stiff peak, then gently incorporate on the mascarpone mixture. Unroll the cake and spread the filling evenly. Sprinkle candied orange peel and reroll the cake, then refrigerate for 2 hours. Cut the sides and dust with powdered sugar, pipe the top with whipped cream, and garnish with rosemary, kumquat slices, and cinnamon sticks.
