Cream cheese frosting:
Start by preheating your oven to 350F. Get three 9-inch round pans and lightly grease with butter, then line the bottoms with parchment paper.
In a large bowl, add melted butter, sugar, molasses, warm water, buttermilk, and eggs. Whisk until well combined. Next, add ginger, cinnamon, cloves, salt, baking powder, and baking soda. Mix again.
Add the flour in batches, mixing after every addition until just combined.
Evenly divide the batter into the prepared round baking pans.
Place in the preheated oven and bake for 30 to 35 minutes until a toothpick comes out clean when inserted into the center. Once done baking, let the cakes cool in the pans for 5 to 10 minutes. After that, remove them from the pans, then transfer them to a cooling rack to cool completely.
Once the cakes are cooled, make the frosting. In a large bowl, beat butter and cream cheese until smooth. Add the vanilla and beat until just combined. Slowly add in powdered sugar until you get the desired consistency.
Place one cake on your cake stand, spread frosting, then add another cake on top. Repeat. Frost the top and sides.
