When I found this awesome fruitcake cookies recipe by Food Network, on Youtube, I knew I had to add this to my already miles-long list of baking ideas. I love fruitcake, but I had never thought of a fruitcake in terms of cookies. Well, when I saw how beautiful these cookies were, I was hooked on this idea. I really kind of prefer cookies to cake, especially for gift giving.

Ingredients For The Christmas Fruitcake Cookies Recipe:

  • 1/2 pound of dried figs
  • 1/4 pound of raisins
  • 2 ounces of candied cherries (coarsely chopped)
  • 2 ounces of dried apricots (coarsely chopped)
  • 1 tablespoon of honey
  • 2 tablespoons of sherry
  • 1 tablespoon freshly squeezed lemon juice
  • 6 ounces of chopped pecans
  • Kosher salt
  • 2 sticks of butter (room temperature)
  • 1/2 teaspoon of ground cloves
  • 1/2 cup of superfine sugar
  • 1/3 cup of firmly packed light brown sugar
  • 1 large egg
  • 2 and 2/3 cups of all-purpose flour
  • Extra candied fruit for the top of the cookies
