This chopped tomatoes, cucumber, and onion salad recipe by Inspired Taste is always a crowd favorite on any occasion. I love making this because it’s so easy to prepare, and the flavors are fantastic. It’s a great side dish for baked fish, chicken, or pork. You can also add it to your tacos or serve with your tortilla chips. Read on or watch the video below for full instructions.
For the dressing:
Note: Since you are going to add raw onions to the salad, you want to choose the sweet ones. You can use Walla Walla onions or Vidalia onions. For the tomatoes, you can choose any type.

In a large mixing bowl, add the chopped sweet white onion, chopped English cucumber, sliced cherry tomatoes, and chopped parsley leaves.
Make the dressing. In a medium bowl, add 2 tablespoons of red wine vinegar, lemon juice, or a combination, 2 tablespoons of extra-virgin olive oil, 1 teaspoon of Dijon mustard, and 1/4 teaspoon of honey if adding. Whisk until well combined. Season the dressing with some salt and freshly ground black pepper.
Add the dressing over the salad and toss until well incorporated. Make a taste test, and add more salt and black pepper if needed. You can serve it right away or cover it and place it in the fridge for up to 3 days.
