This cake has several layers with different textures and flavors. Each layer complements each other perfectly. The bitterness of the coffee blends well with the tanginess of the cream cheese and the richness of cocoa powder. It is definitely a must-try dessert recipe.

For the cream cheese:
In a large bowl, whisk the egg yolks and vanilla extract. Next, mix in 1 tablespoon and 1 teaspoon of sugar, milk, and oil.
Sift the flour and cocoa powder directly to the egg mixture. Whisk until smooth.
In a different bowl, add the egg whites and salt. Whisk, then add cream of tartar and 1/4 cup sugar. Continuously whisk until stiff peaks form.
Fold 1/3 of the whipped egg white into the batter, then add the remaining. Gently fold with a spatula to combine.
Line a baking sheet with parchment paper, then transfer the mixture. Spread evenly. Thump to remove air bubbles. Place inside a 340F preheated oven and bake for about 30 minutes. Remove from the baking sheet and place on a cooling rack with the parchment paper still on. Place a parchment paper on the cake so it does not dry out.
In a cup, mix the boiling water and instant coffee. Transfer to a container.
Make the cream cheese mixture. In a bowl, add the cream cheese and powdered sugar. Whisk to combine. Add vanilla extract and cocoa powder. Once combined, add the cream and whisk to combine. Transfer to a piping bag.
Flatten the cake using a rolling pin. Slice into three equal parts lengthwise.
Cut lady fingers at the same height as the cakes.
Add a layer of the cream cheese mixture over one of the cakes. Soak cut lady fingers in the coffee mixture then place on top of the cream cheese layer. Repeat until the whole length is covered. Add another layer of cream cheese mixture.
Slowly roll the cake, then place it upright onto a flat plate.
Do the same for the other slice of cake, but do not roll it. Wrap it around the first one. Repeat with the remaining cake slice.
Cover the top with the cream cheese mixture then dust with cocoa powder.
