This chocolate gingerbread cake recipe by pankobunny on YouTube is one of the most creative Christmas cakes I’ve seen that would be so fun to make and decorate. I love gingerbread houses, so this recipe is one of my favorites by far this year for the holidays because I’ve never thought about this idea. I think this would be a brilliant idea to make instead of a traditional gingerbread house. Even though it would take more time, I would prefer to eat this type of gingerbread house instead. I’m super mind blown about this cake, and be a different way to decorate a gingerbread house with your kids.

Ingredients:

Gingerbread Spice Mix:

  • 1 tbsp + 1 tsp ground cinnamon
  • 1 tbsp allspice
  • 1 tbsp ground ginger
  • 1 ½ tsp nutmeg
  • 1 ½ tsp ground cloves

Cake batter:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1-2 tbsp Gingerbread Spice Mix
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water

Buttercream:

  • 2 cups unsalted butter, room temperature
  • 5 cups confectioner’s sugar
  • 2 tsp vanilla extract
  • 1 tbsp Gingerbread Spice Mix
  • ¼ cup cocoa powder
  • brown food coloring

Others:

  • Candies, sprinkles, icing decorations and mini wheats

Directions:

First, bake the cake in four 6-inch round baking pans. While the cakes are baking, make the buttercream and set aside to coat the cake later.

Next, assemble the cake by slicing the tops off 3 of the cakes, and shape them into squares. Stack the chocolate cakes and layer with the buttercream icing between each layer. Let the buttercream icing set in the fridge to harden, then decorate with candy.

Overall, I love this gingerbread cake because it looks super delicious and the layers of chocolate cake are my favorite part. Also, if you wanted to alternate different types of flavor or add red and green food coloring, I think it would make it super festive.
