I still couldn’t believe how delicious these chocolate chip shortbread cookies were! I instantly made them when I saw the recipe from The Stay At Home Chef’s YouTube channel, as it only requires 6 ingredients. They turned out so good and better than I expected. The chocolate chips and melted chocolate surely elevated the flavors of these cookies.

To make chocolate chip shortbread cookies, you need butter, powdered sugar, vanilla extract, all-purpose flour, mini chocolate chips, and chocolate melting wafers. They are super easy to prepare – perfect for desserts or snacks. Serve it with a cup of coffee, chocolate, tea, or juice.

Add butter and powdered sugar in a large mixing bowl. Beat together using a hand mixer until light and fluffy. Beat in vanilla extract until combined.
Add the flour and mix until flour disappears. Add the mini chocolate chips and fold until well incorporated using a rubber spatula.
Transfer the dough to a gallon-sized zip-top bag or place it between two sheets of plastic wrap. Roll the dough until it’s 1/4 inch thick. Refrigerate until firm for about 1 to 2 hours.
Once the dough is firm, remove the dough from the plastic and cut it into equal sizes using a butter knife. Place them on a baking sheet lined with parchment paper.
Place inside the oven and bake at 325F for about 18 to 20 minutes or until the edges are lightly brown.
Add dipping chocolate into a microwave-safe bowl. Melt in the microwave on high for about 30 seconds at a time, stirring after intervals. Dip each cookie in the melted chocolate covering 1/3 or 1/2 of the cookie. Place on parchment paper to harden.
