Egg rolls are one of the popular menu items in a Chinese restaurant alongside fried rice. Who can even resist this incredible dish? Perfectly seasoned ground pork and vegetables are wrapped well, then deep fried until golden brown and crispy. No wonder it has been gaining popularity worldwide over the years. Serve it with duck sauce, which has a sweet and sour flavor and a translucent orange color, or with Chinese mustard sauce.

Start with the vegetables. Mix all vegetable seasoning in a bowl and set aside. Fill a large pot of lightly salted water over high heat, then prepare an ice bath. Blanch the vegetables for a minute, then transfer to an ice bath to cool completely. Remove excess water from vegetables by pressing them against a colander. Spread them on a baking sheet to dry.
Make the ground pork recipe. Combine all spice mix in a small bowl. Heat oil on a nonstick pan over medium high heat, then cook the pork on one side until browned, then mix. 2 to 3 minutes before the pork is done cooking, add garlic and cook for a minute. Mix in the sauce mixture and cook until reduced completely. Transfer to a plate lined with a paper towel then set aside.
Toss vegetables with the seasoning mixture, toasted sesame oil, ground pork, and green onions in a bowl.
Preheat the oil to 350F.
Lay the egg roll wrapper flour side facing down and with one corner facing you. Add 1/2 cup of egg roll vegetable mixture in the center but slightly closer to you.
Lift the corner closest to you over the top of the vegetable mixture and roll it over onto itself. Press down on both sides of the mixture, then take the corner sides of the wrapper over the top. Tuck in the sides and front while rolling it forward. Brush the front tip of the wrapper with egg wash and roll to seal it. Repeat with the remaining egg roll.
Fry the homemade egg rolls for about 7 minutes, turning them every minute. Once done, drain on a paper towel or wire rack. If you want them to be super crispy, increase the temperature to 375F, then fry for 2 minutes more. Drain and serve right away.
