Tex Mex Chili Rellenos are one of my favorite foods of all time. I always order chili rellenos at El Mercado on South First Street in Austin, Texas, but I am ashamed to say, I’ve never made them myself because the dish always seemed so difficult. I realized, that making this succulent dish wasn’t difficult at all when I found this fabulous chili rellenos recipe tutorial by Hilah Cooking on YouTube, because it looked so delicious and easy. There was nothing stopping me from creating this awesome dish with my own hands for a family dinner surprise. The ingredients were really simple and straightforward and I already had them available in my kitchen.

Ingredients For Chili Rellenos:

  • 4 poblano chilis
  • 8 ounces of cheese (Monterey Jack, Muenster, Oaxaca, or Asadero)
  • 2 eggs
  • 1 teaspoon vegetable oil
  • 1/2 large onion (thinly sliced into half circles)
  • 1 clove garlic (minced)
  • 4 cups of tomato sauce (either 1 pound of fresh tomatoes pureed or canned tomato sauce)
  • 1 bay leaf
  • Salt and pepper (to taste)
  • Oil for deep frying (about 2/3 cup)
