For the Sauce:
To start, cook the pasta according to its package directions. In the meantime, prep the other ingredients, cut them, and set them aside. Next, place a large heavy-bottomed pot over medium-high heat and add 2 tbsp of olive oil. Once heated through, add the sliced mushroom and saute until softened (about three minutes). Next, add the diced onions and continue cooking for five minutes to seven minutes, stirring occasionally. Add the minced garlic and stir for another minute or until fragrant, then remove to a separate dish.
In the same pot, melt 4 tbsp unsalted butter, then add 1/3 cup all-purpose flour. Cook for one to two minutes while stirring constantly, then add 2 1/2 cups of low-sodium chicken broth, 1 tbsp lemon juice, 1 tsp sea salt, and 1/4 tsp ground black pepper. Mix well. Once smooth, stir in 1 1/2 cups half and half and bring everything to a simmer. Now, add the cooked pasta, shredded chicken, and the mushroom back to the pot, then stir in 1/4 cup of chopped parsley. Mix gently, then sprinkle the top with 1 1/2 cups shredded mozzarella cheese. Cover the pot and bake it at 350 degrees F for 30 minutes, then remove the lid and continue baking for another 15 minutes.
