
My family always has busy weekdays, which is why quick and easy recipes are important for us. One of my go-to recipes is this chicken parmesan casserole from The Country Cook on YouTube. It’s a pasta dish that is quick and easy enough for me to pull off whenever my family requests a pasta dish for dinner. It’s also budget-friendly and tastes so delicious.
I serve this dish almost every week; and sometimes, I substitute the shredded chicken with ground beef or pork. Luckily, this dish is flexible, and you can add veggies if you like. Ingredients:
- 16 oz box penne pasta
- 1 lb cooked chicken, shredded
- 2 tsp Italian seasoning
- 2 cups shredded mozzarella cheese, divided
- 1 cup shredded parmesan cheese, divided
- 1 1/2 jars (32 oz) spaghetti/marinara sauce
- chopped basil, for garnish
Directions:
Step 1
To start, cook your pasta according to its package directions. Once done, drain well and transfer to a large bowl. Add the shredded chicken, 2 tsp Italian seasoning, 1 cup shredded mozzarella cheese, 1/2 cup shredded parmesan cheese, and 1 1/2 jars of marinara sauce. Mix everything until well combined.

Next, transfer the mixture to your casserole dish and spread it nicely and evenly. Cover the casserole with aluminum foil and place it in a 350-degree F oven for 30 minutes. After this, remove the foil and add 1 cup shredded mozzarella cheese and 1/2 cup shredded parmesan cheese. Place it back in the oven and bake for a further ten minutes or until the cheese melts nicely. Once done, garnish the casserole with some freshly chopped basil. Serve and enjoy!
