This recipe only requires simple ingredients. Plus, it comes together easily and quickly. If you have leftover rice, this is the best dish to prepare. Try not to use freshly cooked rice as it will give a different result. It’s too soft and will just clump together when frying.

Start by marinating the chicken. Add the chicken and all the marinade ingredients in a bowl except for the oil. Mix until well combined. Pour in the oil and mix until well incorporated. Set aside.
Place a pan over medium-high heat and add 2 tablespoons of oil. Once a little bit hot, add the eggs and stir fry until golden. Set aside.
In the same pan, add another tablespoon of oil. Once hot, add the chicken and fry it a little bit without stirring. Next, add the minced garlic and stir-fry until they are 70 to 80 percent done. Add the diced carrots and mix well. Next, add the green peas and stir fry for 30 seconds. Transfer to a bowl.
Add 1 tablespoon of oil in the same pan, then add cooked rice. Break into pieces, then add the fried eggs. Season with salt, then add dark soy sauce. Mix until well combined.
Add the carrots, peas, and chicken, followed by sliced green onions. Mix to combine. Serve and enjoy!
