First, wash the potatoes and dry them with a paper towel. Cut the potatoes into bite-size pieces, leaving the potato skin on. (Make sure to cut the potatoes in uniform size so that they will cook at the same rate.) Transfer the chopped potatoes to a pot with water and bring them to a boil for about 6 – 7 minutes. Next, shred the rotisserie chicken into pieces. (Remove the skin, bone, and cartilage.) After this, mince four cloves of garlic and chop the onion and the green onion.

Next, fry 5 – 6 slices of bacon in a pan. After frying, remove the bacon and set them aside. Into the bacon fat, add the onion and green onion. Saute them. After a few minutes, add the minced garlic, then season with all-purpose seasoning (salt, pepper, garlic, onion powder, cayenne pepper). Once the onions are nice and soft, add 2 – 3 cups of frozen broccoli. Saute them and let the broccoli start to defrost. Next, drain the potatoes, then add the sauteed veggies to the same pot. Add the shredded rotisserie, 1 1/2 cups of sour cream, and 1 box Boursin garlic and herbs cheese. Mix them all well. Add 1/2 cup ranch dressing (optional), 1 cup shredded parmesan, 2 cups shredded Colby jack cheese, and the bacon. Give it a good mix. Transfer it to a casserole dish and smooth everything out. Season the top with more all-purpose seasoning and some more shredded cheese. Place it in a preheated oven of 375 degrees F and bake for about 20 minutes. After baking, garnish it with some chopped parsley for a pop of color.
