This chicken bacon pasta bake by Kitchen Sanctuary is now my favorite recipe! It has everything that I love–chicken, bacon, cheese, and tomato. The flavors are just the best. It surely is the perfect lunch or dinner dish for your whole family!
Ingredients:
- 4 1/2 cups of dried pasta
- 1 tablespoon of vegetable oil
- 3 large chicken breasts (cut into bite-size chunks)
- 1 large onion (peeled and chopped)
- 1 yellow bell pepper (de-seeded and chopped)
- 1 red bell pepper (de-seeded and chopped)
- a pinch of salt and pepper
- 2 cloves of garlic (peeled and minced)
- 1 tablespoon of tomato puree
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried thyme
- 14 oz of chopped tomatoes
- 1/2 cup of double heavy cream
- 3 packed cups of fresh baby spinach
- 6 rashers cooked bacon (chopped)
- 1 picked cup of strong cheddar cheese (grated)
- 1 picked cup of mozzarella (grated)
- small bunch of parsley (roughly torn)

Instructions:
Step 1:
Preheat your oven to 375F. Get a large pan, fill it with water, and let it boil. Cook the pasta for 1 minute less than recommended time on the pack. Once cooked, drain.
Step 2:
While cooking the pasta, add oil to a large frying pan and place over medium heat. Once hot, add the chicken, and cook until just sealed for about 5 minutes.
Step 3:
Add chopped onion and cook for 3 to 4 minutes until softened. Next, add chopped peppers, salt, pepper, garlic, tomato puree, oregano, and thyme. Mix and cook for about 2 to 3 minutes.
Step 4:
Add the tomatoes and cream. Mix and bring it to a gentle bubble.
Step 5:
Next, add the pasta, spinach, and cooked bacon. Stir, then transfer to a large baking dish. Sprinkle cheddar and mozzarella cheese on top. Place it inside the oven for about 20 to 25 minutes until golden brown.
Step 6:
Once done baking, remove it from the oven and top it with parsley. Serve and enjoy!
