The secret to making delicious and crispy nuggets is in the flour dredge. It is packed with different seasonings, such as dry milk powder, chicken bouillon powder, onion powder, salt, paprika, lemon pepper, black pepper, and cayenne pepper. Make sure to do a double coating as it keeps the coating crispy, prevents the chicken from sticking to the pan, and seals in the moisture. Let the chicken sit before frying so the coating sticks properly.

For the breading:
Cut the chicken breast into bite-sized pieces and place them in a resealable bag followed by the pickle juice. Place in the refrigerator for an hour.
Make the flour dredge. In a bowl, add all-purpose flour, dry milk powder, chicken bouillon powder, salt, onion powder, paprika, lemon pepper, black pepper, and cayenne pepper. Whisk until well combined.
In a different bowl, add the egg and milk.
Add a few drops of the egg-milk mixture to the dry mixture to make clumps.
Remove the chicken from the pickle brine. Dip into the egg-milk mixture, then transfer to the dry mixture to coat. Double-coat the chicken by repeating the process. Once done, place on a baking tray in a single layer. Let them sit for 10 minutes.
Add a generous amount of oil into a pan and heat it to 350F. Use the end of the wooden spoon to check if the oil is hot enough. If it bubbles around the wood, your oil is ready. Add the coated chicken and cook for 3 to 5 minutes. The time depends on how thick the chicken pieces are. Make sure not to overcrowd the pan.
Remove using a slotted spoon and place on a wire rack over a baking sheet. Serve with your favorite sauce and enjoy!
