Easy Chewy Oatmeal Raisin Cookies Ingredients

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 14 teaspoons of unsalted butter (room temperature)
  • 3/4 cup of granulated sugar
  • 3/4 cup of light brown sugar (packed)
  • 2 large eggs at room temperature
  • 1 teaspoon of pure vanilla extract
  • 2 cups of old-fashioned oats
  • 1 cup of raisins

Note: Use a spoon to scoop the flour out from your container then add to your measuring cup. Level it before adding it to your bowl.

How to Make Chewy Oatmeal Raisin Cookies

Step 1:

Preheat the oven to 350F, then line a rimmed baking sheet with parchment paper.

Step 2:

In a medium bowl, add flour, baking soda, cinnamon, and salt. Whisk until well combined.

Step 3:

In a large bowl, add butter, brown sugar, and granulated sugar. Beat until the mixture is light and fluffy using a handheld mixer. Alternatively, you can use a stand mixer. It will take between 3 to 6 minutes.

Step 4:

Add the eggs one at a time, followed by the vanilla. Make sure to scrape down the edges of the bowl before each addition.

Step 5:

Add in the flour mixture. Turn the setting to the lowest, the beat until it just begins to combine. Turn the setting up and mix again until it is just combined.

Step 6:

Mix in the oats and raisins.

Step 7:

Scoop the cookies using a 1 1/2 tablespoon cookie scoop, then roll them into balls. Place them 2 1/2″ inches apart on the baking sheet.

Step 8:

Place inside the oven and bake for 11 to 12 minutes or until the edges of the cookies begin to turn golden brown. Rotate the pan halfway through.

Step 9:

Once done baking, remove from the oven and let the cookies cool on the baking sheet for 2 minutes. Transfer to a cooling rack to cool completely.

Transfer to an airtight container for up to a week.
