Ingredients

  • 1 pound fettuccine
  • 3 pints of cherry tomatoes (halved)
  • 1 medium onion (diced)
  • 1 stick of unsalted butter
  • salt and pepper to taste
  • 1/4 cup of parsley (minced)
  • 1/4 cup of basil (hand-torn)
  • 2 cups of reserved pasta water

Instructions

Step 1:

Get a large pan and add the butter and chopped onions. Saute over medium-low heat until soft for about 5 minutes then add the tomatoes. Season with a teaspoon of kosher salt.

Step 2:

Cook the sauce over medium heat for 30 to 35 minutes while stirring frequently. You want the cherry tomatoes to burst and soften and the butter to completely blend.

Step 3:

While cooking the sauce, bring a large pot of water to a boil. Add 2 tablespoons of salt per gallon of water. When the sauce is almost to your liking, cook the fettuccine for 1 minute less than al dente.

Step 4:

A couple of minutes before the pasta finishes cooking, add one cup of pasta water to the sauce and stir well. Continue to cook the sauce over medium heat.

Step 5:

Add the pasta to the sauce and toss until well coated. Cook until the pasta is just al dente then turn off the heat. Season it with more salt and pepper if needed. Add the herbs, and toss that pasta again. If the sauce is dry, you can add more pasta water. Serve on a plate and garnish with parmesan cheese on top. Enjoy!
