Desserts are becoming more impressive. This cherry cheesecake tacos by Sweet Pea’s Kitchen on YouTube is a combination of crispy flour tortillas, graham crackers, cream cheese, and a cherry pie filling that gives off an explosion of flavor in every bite. Perfect for family reunions, parties, barbeques, dinner parties, and so much more. My favorite time to eat it is a guilty pleasure of pairing it with a good movie at midnight.

Place 2 sleeves of graham crackers in a food processor and pulse until the crackers are sand in texture. Pour 3 tbsp of granulated sugar over the crushed grahams and mix well. Lay the graham/sugar mixture on a large plate and set aside. In a heated skillet, pour 1 ½ inch of oil and heat it up to a boil.

Using tongs, fold the tortilla in half to form a folded taco shell and hold it in place.  Cook the tortilla until it becomes golden brown. Once golden brown, remove and immediately roll and cover the graham crumbs. Make sure the tortilla is fully coated. Set aside the tortilla on a paper towel or baking sheet. Cook the rest of the tortillas.

In a mixing bowl, add 8 oz of cream cheese, 1 cup of powdered sugar, and 8 oz of cool whip.  Whip the ingredients until well combined and add them to a piping bag. Squeeze out some cream cheese mixture to fill your fried tortilla shells. Top the tortilla with a cherry pie filling.
