Tired of the same old chicken recipes you cook at home? Here’s a new and delicious dish for you. This is the cheesy spinach stuffed chicken breasts by Natashas Kitchen. Preheat the oven to 425 degrees F and put a rack in the center. Put cream cheese, mayo, and garlic in a bowl, then mix with the fork. Stir in the mozzarella, parmesan, and chopped spinach leaves until combined.
On a flat surface, lay the chicken. Cut a 3/4 slit of the way through without cutting all the way through. Next, stuff each chicken breast with 1/3 of the mixture. To seal the chicken, place a toothpick horizontally (make sure it can lay flat on the sides of the searing).
Now it’s time to season the chicken breast. Sprinkle 3/4 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika on the outside of the chicken.
Pour 1 1/2 tablespoons of olive oil into a cast iron or large heavy-bottomed skillet, then place over medium heat. Once hot, add the chicken breast and saute for 4 minutes on each side until it turns golden brown.
Flip them again and immediately place the skillet inside the preheated oven. Bake at 425 degrees F for 10 to 15 minutes or until the thickest part of the chicken has an internal temperature of 165 degrees F. Once done, let it rest for 5 minutes before slicing. Spoon pan juices over the chicken, then serve.
