Ingredients:

  • 3 tbsp unsalted butter
  • 1 onion (chopped, about 2 cups)
  • kosher salt and freshly ground pepper
  • 1 lb curly-leaf spinach (thick stems removed, and then chopped)
  • 2 tsp fresh thyme leaves
  • 1 lb Yukon gold potatoes (peeled and cut into 1/2-inch dice)
  • 1 & 1/2 cups of whole milk
  • 12 large eggs
  • scant 1/4 tsp freshly grated nutmeg
  • 6 oz fontina (coarsely grated

Directions:

Step 1

Preheat the oven to 375 degrees F. In a pan, melt 2 tbsp of unsalted butter, then add the chopped onions. Season with 1/2 tsp of kosher salt. Cook it until the onions are browned a little. Next, crack 12 eggs in a large bowl and beat them. Add 1/4 tsp of nutmeg into the beaten eggs, 1 & 1/4 tsp of salt, and a little pepper. After this, back to the onions, you can now add the roughly chopped spinach to the pan. Once the spinach wilted down, add 2 tsp fresh thyme and stir it. Add the diced potatoes and 1 & 1/2 cups of milk. Stir it lightly and season with a little pepper.

Step 2

Bring it to a boil and then simmer it until it reduces and thickens slightly. (The potatoes should be tender but not mushy and the liquid should be slightly reduced and thickened.) After this, turn off the heat and let it cool to room temperature. In the meantime, grease the casserole dish and grate the cheese. Once the potato mixture cooled down, you can combine it with your egg mixture, then add 3 oz of grated fontina cheese. Transfer it to the casserole dish, cover with foil and place it in the preheated oven of 375 degrees F and bake for 30 minutes, then uncover it, sprinkle the remaining grated cheese, and continue to bake it for 15 to 25 minutes more.
