Ingredients:

  • 2 pieces (7 ounces each) of chicken breast
  • ¾ tsp of salt
  • ¼ tsp of pepper
  • 2 tbsp of unsalted butter
  • 7 ounces or 2 heaping cups of mushrooms, sliced into 1/8″ thick pieces
  • 2 cloves of garlic, finely minced
  • ½ tsp of thyme leaves
  • 2 cups of baby spinach
  • 3 ounces of mozzarella, sliced
  • 1 tbsp of olive oil

Directions:

Step 1

Preheat your oven to 200°C/390°F (180°F fan), then start cutting pockets into each chicken breast making sure not to cut all the way through and cut on the side with the fold in the meat, to keep the smooth side intact. Season the inside and outside of the chicken with half the portion of the salt and pepper, then prepare the mushroom filling. Place a heavy-based oven-proof skillet on a stove and melt the butter over high heat, then add the mushrooms sliced into 1/8″ thick pieces. Give them a good stir, then let cook for about 3 minutes or until they start turning into a golden color. Add the garlic, thyme, and the remaining salt and pepper, then stir until well combined, and continue cooking for 2 more minutes or until the mushrooms are nice and golden.

Step 2

Now, add the baby spinach, then stir it around for about 30 seconds or until wilted. Stuff this mixture into the pocket of each chicken evenly, then top them with cheese, and seal them with toothpicks. Give the pan a quick wipe using paper towels, then add the oil, and heat it up over medium-high heat. Add the stuffed chicken breasts, then sear them well for about 1½ minutes on each side until nice and golden. Place them in the preheated oven, then let them bake for about 15 minutes or until the internal temperature of the chicken reaches 65°C/149°F. Let the chicken rest for about 5 minutes while loosely covered with foil, then serve, and enjoy!
