Ingredients:

  • 1 1/2 to 2 lbs of cooked and seasoned chicken (shredded or chopped)
  • 14 corn tortillas
  • 1/3 cup of oil (to soften the corn tortillas)
  • 12 oz to 14 oz of Monterey jack cheese (or Colby jack cheese)

For the red sauce:

  • 1/4 cup of oil
  • 4 tablespoons of all-purpose flour
  • 2 tablespoons of tomato paste
  • 1/4 teaspoon of ground cumin
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1 chicken bouillon cube and 2 cups of water (or 2 cups of chicken stock/broth)

Instructions:

Step 1:

Get the tortillas and pass them through hot oil on a griddle or pan for only 10 to 15 seconds. This will become easier to roll without breaking.

Step 2:

In a preheated pan, add a quarter cup of oil and all-purpose flour. Mix and cook for 1 minute. Next, add the chicken bouillon cube and crush it into small pieces. Add the chili powder and turn the heat to medium. Mix until well combined. Add tomato paste, ground cumin, and onion powder. Then add the water while continuously stirring the sauce. Let it simmer until it thickens.

Step 3:

Assemble the chicken enchilada. Get one corn tortilla and add the cheese and chicken. Roll then place in a 9 x 13 baking pan. Continue until the bottom of the pan is filled. Once done, pour the sauce on top. Next, spread the cheese.

Step 4:

Cover the baking pan with aluminum foil. Place the enchilada in a preheated oven at 375 degrees F. Bake for 20 minutes covered then remove the aluminum foil. Continue baking uncovered for 10-15 minutes or until the cheese is melted on top.
