Do you love meatballs? If you do, try these cheesy potato beef meatballs by That Recipe. I have never seen meatballs prepared this way. The mashed potatoes are spread on the bottom, topped with a layer of tomato sauce, followed by the meatballs and cheese. It is absolutely delicious and definitely worth making.

If you don’t want the grease to go into your mashed potatoes, a viewer recommends frying the meatballs in a pan before placing them inside the foil. Start by getting 3 sheets of aluminum and a bowl. Place the bowl upside down on top of a sheet. Fold the sheets to the sides of the bowl. Remove the bowl, and repeat with the remaining aluminum. Place them on a large baking sheet lined with parchment paper.
Add the sliced potatoes to a pot and fill with water until fully submerged. Add some salt and cook until fork tender. Drain them and transfer them to a bowl. Mash then add butter, salt, pepper, and chopped parsley. Mix until well combined.
Spread the mashed potato mixture on the bottom of the foil containers.
In a medium bowl, add tomato sauce, dried basil, and olive oil. Stir to combine. Spread on top of the mashed potato layers.
In a large bowl, add the ground beef, grated onion, salt, pepper, paprika, garlic powder, breadcrumbs, and egg. Mix until well combined using your hands. Get a small amount of the mixture and form it into a ball. Repeat with the remaining mixture.
Place the meatballs on top of the potato and tomato sauce.
Place in a 350F preheated oven and bake for 30 minutes. Keep an eye on them as the time may vary depending on your oven.
Sprinkle grated mozzarella cheese on top and some chopped parsley. Place back inside the oven and bake until the cheese has melted. Serve and enjoy!
