This Mexican-style quesadilla by HomeCookingShow is always a crowd favorite because of its delicious filling and tortilla. After you try this, you’ll realize that nothing can truly top homemade dishes and snacks. Every bite is just glorious. It’s savory, sweet, tangy, and salty. Make the tortilla. In a big bowl, mix 3 cups of all-purpose flour, 1 teaspoon of salt, 1/2 teaspoon of baking powder, and 5 tablespoons of oil. Mix everything until well combined. Gradually, add warm water while mixing until it forms a dough.
Knead the dough for about 2 to 3 minutes until it’s smooth. Cover the dough and let it sit for about 2 hours at room temperature.
Form the dough into equal-sized balls. Flour your surface and flatten one ball into a thin layer. Repeat with the remaining dough.
Place a pan over medium heat. Add the rolled dough and cook for 30 to 40 seconds. Once you can see bubbles, flip it and cook the other side. Do the same for the remaining pieces. Wrap them in a cloth while you make the filling.
In a large bowl, combine cooked corn kernels, onion, bell pepper, green chili, coriander leaves, salt, pepper, and mixed herbs. Mix everything until well combined.
Make the quesadilla. Grease a skillet and place over medium-low heat. Add the tortilla to the pan. On one side, add grated cheese, veggie filling, and salsa. Add more cheese on top, then fold the tortilla in half. Gently press it. Cook until the cheese is melted and the tortilla is a bit browned. Flip and cook the other side.
Slice and serve. Enjoy!
