Mashed potatoes are one of the all-time favorite comfort foods I have ever eaten. Mashed potatoes are also excellent with bacon and green onions, so when I found this video recipe tutorial for leftover mashed potato muffins with green onions by Kelly Senyei, on YouTube, I really got excited.  My grandma used to make a mashed potato dish that was very much like this but she called it muffin potato poppers and we all loved it. We used to eat these potato poppers with her famous pork chops or sometimes just on their own with lots of spicy ketchup. This mashed potato muffins dish by Kelly has a very interesting twist though, in that the potatoes are mashed and the cheese and chives are added, then the mixture is mashed and then added to a muffin pan and cooked for 30 minutes in a 350°F oven.

Ingredients For The Cheesy Leftover Mashed Potato Muffins:

  • 3 cups of leftover mashed potatoes
  • 1 large egg
  • 1 cup of shredded cheese (divided)
  • 3 tablespoons of chopped chives (or green onions)
