With these cheesy hash brown cups from Foodamentary: Adventures in Food on Youtube, your busy mornings will be much easier! You can make this ahead of time and store it in an airtight container in the refrigerator for at least three days. Ingredients:

  • 4 cups of frozen shredded hash browns (thawed)
  • 3 eggs
  • 1/4 cup of half and half (or milk)
  • 1/2 onion (chopped)
  • 2 cups of shredded cheddar cheese
  • parsley flakes, garlic powder, onion powder (to taste)
  • ham, bacon, sausage, mushrooms, or bell peppers (optional)

Directions:

Step 1

In a bowl, add 4 cups of shredded hash browns followed by 1/2 chopped onions, some bacon bits, 2 cups of shredded cheddar cheese, 1/4 cup half and half, and 3 cracked eggs. Mix it well. After mixing, season it with garlic powder, onion powder, and parsley flakes.

Step 2

Spray twelve muffin cups with some cooking spray, then evenly distribute the hash brown mixture into each cup. After filling all the cups, place them in a preheated oven of 350 degrees F and bake them for about 35 to 40 minutes or until they are nice and golden brown. After 35 minutes, get it out of the oven and let it cool for about 15 minutes before removing them from the muffin tins. (You can keep this in the refrigerator in an airtight container for about three days.)
