In a bowl, mix all the enchilada seasonings, then set aside. This will be used for the filling and sauce.
Get a saucepan and drizzle oil, then turn your heat to medium. Once hot, add flour and stir it for 20 seconds. Add 2 tablespoons of the enchilada seasoning, broth, and tomato. Stir well to combine. Increase the heat to medium-high and cook for 4 minutes. Whisk it often until the sauce thickens. Once done, remove from heat.

Preheat the oven to 350 degrees F. Lay the tortilla on your countertop and put 2/3 cup of filling on the lower third. Sprinkle cheese, then roll with the seam side down. Repeat the same for the remaining 8 tortillas. Spread a scoop of enchilada sauce across the base of a 9 x 13″ pan and place the enchiladas. Pour the remaining sauce and sprinkle with cheese. Place in the oven and bake for 20-25 minutes or until the cheese is melted and golden. Serve immediately and garnish with coriander.
