This cheesy cheddar bacon scalloped potatoes by Island Vibe Cooking is a simple yet delicious recipe that I always make at home. It has melted cheese, crispy bacon bits, and baked potatoes – all the yummy ingredients we love. Make sure to give this a try!

Peel and cut the potatoes evenly so they will cook at the same time. Once done, place the sliced potatoes in a bowl and fill it with cold water to remove the starch. Rinse it 3 to 4 times until the water becomes clear.
Boil some water in a pot and sprinkle some salt. Once boiling, add the potatoes and boil for 2 minutes. Make sure not to overcook them. Strain the water and set aside.
In a pot, add 3 tablespoons of unsalted butter and half a teaspoon of minced garlic. Saute until slightly brown. Next, add the chopped yellow onion and cook until translucent.
Turn the heat to low. Add a tablespoon and one and a half of flour little by little while stirring it. Next, add 1/3 cup of whole milk while stirring constantly. After that, add a half can of chicken stock, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of pepper, and 1 tablespoon of chopped parsley. Mix well.
Add 1 1/2 tablespoons of cheddar cheese and stir in.
Add the potatoes and mix until everything is coated. Transfer the coated potatoes to your casserole dish and sprinkle with more cheese on top.
Place inside the oven and bake at 350F for about 25 minutes.
Once done baking, sprinkle bacon bits on top and chopped parsley. Serve and enjoy!
