I love cornbread and I’ve had the regular salty cornbread and sweet. I love cheese so this would be heaven and serve it with BBQ. This would be good to make if you want other different cornbread options. My overall favorite type of cornbread is sweet honey cornbread because it is moist. I think this cheese-stuffed cornbread would impress a lot of people since it isn’t a typical cornbread you’d have.

Ingredients:

  • 1 cup buttermilk
  • 1/2 cup unsalted butter
  • 1/4 cup honey
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 oz. pepper jack cheese, cubed

Directions:

First, preheat the oven to 375F. Combine buttermilk, butter, honey, and eggs in a medium bowl. Whisk to evenly combine. In a separate large bowl, whisk to evenly combine. Then, in another bowl, whisk together flour, cornmeal, baking soda, and salt. Combine the wet and dry ingredients together.

Overall, I can’t wait to make this cheesy cornbread because it looks moist and addicting. Anything that is cheesy would taste amazing and it looks buttery too. Cornbread is easy to make and adding the extra layer of cheese in the middle takes it to another level. You can use any type of cheese so I would add pepper jack and mozzarella.
