Gently core out the center of the mushrooms using a small spoon or knife to create a deep well for your stuffing. Set them aside. Next, add 8 oz whipped cream cheese, 1/2 cup grated parmesan cheese, 1/2 cup grated white cheddar cheese, minced garlic, and 1 tsp Hidden Valley Ranch seasoning mix in a large bowl and mix until well combined. After this, divide the cheese mixture into the mushrooms.
In another bowl, combine 1/2 cup panko breadcrumbs, 1/2 cup grated parmesan cheese, 1 tbsp freshly minced Italian parsley, 1 tsp garlic salt, and 2 tbsp unsalted butter. Mix well until combined. Then, top each mushroom with the crumb topping. Place the stuffed mushrooms in the center rack in a preheated 375 degrees F oven and bake for 20 minutes. While waiting, make the four cheese cream sauce.
Melt 1/4 stick unsalted butter in a small saucepan over medium heat, then add 1 cup whole milk, 1/4 cup of shredded provolone cheese, 1/4 cup grated mozzarella cheese, 1/4 cup grated parmesan cheese, and 1/4 cup grated white cheddar cheese. Add 2 dashes of white pepper, a pinch of kosher salt, and two cranks of ground black pepper. Mix and allow the cheese to simmer on low heat until all of the cheese is melted. Once done, pour the creamy four cheese sauce over the baked stuffed mushrooms. Serve and enjoy!
