Rinse off the broccoli thoroughly with cold water, then cut the stem off. Next, cut the broccoli florets into small pieces and set them aside. After this, preheat a pot of salted water to medium heat, and once it comes to a boil, add the broccoli florets. Stir and let it simmer for three minutes. After parboiling, strain the broccoli into a mesh strainer. Let them cool for 20 to 30 minutes.
Heat a pot to medium heat, then add 3 1/4 cups of water and 1/8 tsp salt. Stir, let it come to a gentle simmer, then turn your fire to medium-low heat. Add 1 1/2 cups long-grain jasmine rice, give it a quick stir, and cover it with its lid. Let it simmer for 20 to 23 minutes. Once done, turn off the fire, remove the lid, and let the rice cool for 30 minutes. After cooling the rice down, go ahead and stir it around.
Preheat your pot to low heat and add 4 tbsp of butter. Once it’s melted, add 1/3 cup of whole milk, 1/3 cup heavy whipping cream, 1/8 tsp salt, 1/8 tsp black pepper, 1/8 tsp Creole seasoning, 1/8 tsp Chef Paul’s vegetable magic, 1/2 tsp granulated onion, 1/2 tsp granulated garlic, and 1/8 tsp ground turmeric. Stir together until combined and heat it for about a minute. After this, add 1 tbsp of your shredded parmesan cheese and 8 oz sharp cheddar cheese. Stir and let the cheese melt. Next, add the parboiled broccoli florets and stir all the ingredients together. Then, stir in the cooked rice. Serve and enjoy.
