Pasta recipes are great when you’re on a tight budget but still want to cook delicious food that will give you energy throughout the day. Ingredients:

  • 14.1 oz of pasta (use any pasta of your choice)
  • 1 tablespoon of olive oil
  • 3 garlic cloves (thinly sliced or minced)
  • 2 cans (1.76 lbs) of diced or crushed tomatoes
  • 2 teaspoons of dried oregano
  • 1 tablespoon of balsamic vinegar or red wine vinegar
  • 1 oz of fresh basil leaves chopped (stems reserved)
  • sugar to taste
  • seasoning to taste

For garnish:

  • basil leaves
  • parmesan cheese
  • cracked black pepper

Instructions:

Step 1:

Fill a pot with water and place over high heat allowing it to boil. Once boiling, add the pasta, give it an occasional mix and cook one minute less than the packet instructions.

Step 2:

Place a large high-rimmed pan over medium-high heat. Once hot, put in one tablespoon of olive oil and the diced onion. Saute while mixing regularly for about 3 to 4 minutes just until lightly golden and start to become translucent. Then add the minced or thinly sliced garlic. Continue sauteing for 1 minute. Mix it continuously to allow it to release its flavors and prevent burning.

Step 3:

Add 1 tablespoon of balsamic vinegar, 2 cans of crushed tomatoes, and 2 teaspoons of dried oregano. Mix them until well combined. Quickly taste the sauce and add seasoning. You can also add sugar to balance the acidity. Mix again then add the basil stems. Give a quick mix and let it simmer. Once it’s simmering, bring the heat to low while occasionally stirring for about 8 minutes. Next, remove the basil stems.

Step 4:

Add the pasta straight from the water to the sauce. Add the chopped basil leaves and give it a good mix until the pasta is well coated with the sauce. Taste one more time and add seasoning if needed. Once done, transfer to a plate then serve. Enjoy!
