A delicious and comforting soup doesn’t need a lot of ingredients. Here’s a cheap and easy Italian soup recipe by Sip and Feast on Youtube. It’s very easy to make, perfect for busy days when you just want a warm and hearty meal. Read on for the full instructions.
Ingredients:
- 1/4 cup of extra virgin olive oil (plus more for finishing)
- 1 medium onion (diced)
- 2 ribs of celery (diced)
- 2 to 3 medium carrots (diced)
- 1 teaspoon of dried oregano
- 3 oz of tomato paste
- 8 oz of canned plum tomatoes (hand crushed)
- 8 oz of water (you can use chicken stock, beef stock, or beef base)
- 16 oz of brown or green lentils
- 1 rind of Parmigiano Reggiano (optional)
- salt and pepper to taste
- 8 oz of baby spinach

Instructions:
Step 1:
Place a pot over low heat, and add extra virgin oil, diced onion, carrot, and celery. Give it a nice mix. Cook until soft for about 10 to 15 minutes.
Step 2:
Add 3 oz of tomato paste to the vegetables. Continuously stir for about 5 minutes, so it won’t burn.
Step 3:
Add 8 oz of plum tomatoes to the pot. Mix them in and crush them with your wooden spoon if there are still some chunks.
Step 4:
Combine the lentils and mix until well combined. Next, add the rind of Parmigiano Reggiano and 8 oz of water. If you prefer beef stock or chicken stock, use them as an alternative to the water. Add 1 teaspoon of dried oregano, and season with salt and pepper. Mix it well, then turn the heat to high and bring it to a boil.
Step 5:
Once boiling, lower the heat and let it simmer for about 30 to 45 minutes. Make sure to stir it occasionally so nothing sticks at the bottom. You can add more water or stock if needed. Taste and adjust the seasonings based on your preference.
Step 6:
Add the baby spinach and mix well. Scoop some into a bowl, drizzle with olive oil, and some Parmigiano Reggiano on top. Enjoy!
